After mangoes, litchis are the second most popular summer delight. Litchi is a juicy tropical and subtropical fruit. It is a natural refresher packed with various health benefits. Litchi prevents growth of cancer cells, and is low on calories and it contains no cholesterol or saturated fats. Rich in fiber, litchi contains many antioxidants. It improves blood flow, reduces weight, protects skin from harmful sun rays and contains many anti-infection agents. Litchi is good for metabolism and controls heart rate too.

Litchi Lassi Recipe

What You Need

  • 1 cup each of plain yogurt and chopped litchis
  • ½ cup litchi juice
  • ¼ teaspoon cardamom powder
  • Honey to taste
  • Ice cubes

Let’s start

  • Take a blender and put all the ingredients in it
  • Blend to make a smooth paste and strain if required. Enjoy cool!

Litchi Tea Recipe

What You Need

  • 2-3 herbal tea bags
  • 5 cups of hot water
  • 1-2 cups of litchis, deseeded
  • 2-3 tablespoons syrup or honey
  • Mint leaves
  • Ice cubes
  • Jasmine flavour tea leaves (optional)

Let’s start

  • Take a tea pan and put 5 cups water, when it becomes steaming hot add 1 teaspoon of loose tea leaf for every cup
  • Let it steep for 10-15 minutes, stain the leaves and let it cool in the fridge.
  • Now take a glass and fill it with ice and some litchis.
  • Then add litchi syrup or honey and few drops of jasmine flavour (optional).
  • Now add the chilled tea into it, garnish with mint leaves and enjoy.

Stuffed Litchi Recipe

What You Need

  • 3 cup litchis
  • ½ cup softened low fat cream cheese
  • 6 tablespoons each of chopped pecans and glazed ginger
  • 2 tablespoons brandy

Let’s start

  • Take a bowl and mix all the ingredients together, except litchis.
  • Now peel and remove side from litchis, then fill the mixture into it.
  • Serve these stuffed litchis as a starter.

Litchi Soup Recipe

What You Need

  • 2 cup litchi juice
  • 1 cup litchi
  • ¼ cup low fat buttermilk

Let’s start

  • Take a saucepan and boil litchi juice on medium heat
  • Now add litchi into it and steep for 5-10 minutes
  • Let it cool for few minutes and then pour the mixture in blender.
  • Add buttermilk and blend until smooth, then refrigerate for 4-5 hours.
  • Then blend it again and garnish with grounded roasted cumin seeds and enjoy.

Litchi Coconut Rice Pudding Recipe

What You Need

  • 2 cup litchis
  • 1 cup each of coconut milk, low fat milk and white rice
  • 2-3 teaspoons brown sugar
  • 2 teaspoons litchi syrup

Let’s start

  • Take a pan and boil the milk over medium heat.
  • Now add rice and brown sugar, stir until it becomes thick.
  • Now add litchis and syrup. Cook for 5 minutes and let it cool.
  • Garnish with nuts or cinnamon powder and serve hot or cold as per wish.
